Orange, Beetroot And Spinach Salad

I’m in love with this salad!  It offers a satisfying (and eye-pleasing!) array of colour and crunch as well as being packed with antioxidant and phytonutrient-rich foods.

It features juicy oranges, gorgeously red beetroots, green spinach and crunchy pine nuts.

This beautiful, organic salad is bursting with flavours!

Ingredients

The salad

  • 80g pine nuts
  • 1 whole orange
  • 3 small cooked beetroots
  • ½ onion
  • 1/2 bag organic baby spinach leaves

The dressing

  • 1 tbsp organic apple cider vinegar
  • 1 tbsp freshly squeezed lemon juice
  • 2 tbsp organic extra virgin olive oil
  • A pinch of Himalayan salt and pepper to taste

How To Make It

Layer the orange and beetroot slices onto the spinach.

Add the chopped onion and pine nuts.

Mix all the dressing ingredients together, pour over the top of the salad and toss lightly.
